Ale told me about this intriguing pasta dish from Bari.

It's called Spaghetti all'assassina.

It looks like this.

Instead of boiling, one cooks the spaghetti in thick tomato broth with a lot of peperoncino.

And it gets slightly charred. Ahh. My heart sinks for the charriness of the charred food.

Found this beautiful passage from her book on how someone described what could be empathy actually is.
